Higher menu prices do not automatically mean higher profits. A chamber analysis reveals cost pressures – but for the 2024 financial year, not as a completed assessment of the 2026 season.
What lies behind a higher bill
For the restaurant-sector companies examined, the Croatian Chamber of Economy HGK reports that total revenue in 2024 rose by just over 19 percent compared with 2023. Expenses increased faster, by more than 21 percent; profit fell by almost five percent. Personnel costs rose by over 30 percent, and raw materials and supplies by nearly 14 percent. Gross investment in new long-term assets fell by 17.6 percent.
Published on 24 February 2026, this retrospective explains a cost squeeze. It proves neither that every restaurant makes a loss nor that profits look the same this autumn. Revenue is also not the same as a price index: higher turnover can result from changes in quantities and offerings.
Why another set of statistics looks different
Fina published a broader analysis for the same financial year, covering accommodation as well as food preparation and service. These 14,174 companies recorded total revenue of 7.1 billion euros. Their aggregate net profit was 516.9 million euros, compared with 326.2 million the previous year.
This is not direct evidence against the restaurant-sector analysis. Fina’s group also includes accommodation businesses; the agency names Valamar Riviera and Maistra among the largest revenue generators. Calling that total the profit of all restaurants means comparing different groups of companies. Likewise, profit, the net profit balance and cash available cannot simply be treated as interchangeable.
An illustrative calculation, not an industry claim
Take a purely fictional business: 100 euros of revenue against 90 euros of costs. If it later has 110 euros of revenue and 103 euros of costs, revenue has increased, but the simple surplus has fallen from ten to seven euros. This example only explains the arithmetic; these are not measured figures for a Croatian restaurant.
A company’s complete financial accounts are more complicated. For the basic question, however, this distinction is enough: guests see the selling price on their receipt. Whether it generates higher profit cannot be determined without the other side of the calculation.
The actual offering still matters to guests
Cost pressure is not an automatic justification for every price. When you visit a restaurant, quality, portion size, service and a total price clearly visible in advance remain decisive. For daily specials and dishes priced by weight, ask before ordering what you can expect the bill to be.
The sober conclusion is therefore neither “it is all a rip-off” nor “every restaurant is struggling to survive”. The available figures describe selected companies and a completed year. A reliable assessment of the 2026 season requires new data, the same industry coverage and a clearly defined comparison period.
